We have 15 old neglected apple trees, bearing horrible fruit.
What would we need to do to (besides pruning) to get them to bear well again?

Wow, with 15 trees you have the makings of a science fair project. If you get 15 answers you could try them all and become your own expert on the subject. Years ago a friend bought some property in Virginia with 200+apple trees that hadn't been touched in 20 yrs.(great morel mushroom patch every spring). With the sometimes conflicting advice from the owners of surrounding orchards we tried a little of everything. First we removed the badly damaged and diseased trees and spent three years doing remedial pruning, pest and disease control. Then we 'top worked' (grafted) 50 trees with new varieties. What we ended up with was about 150 trees producing 8 varieties of apples. It could never compete with a commercial orchard but we had fun and learned allot. It also put his daughter through college.

well depending on the age of the tree the type of tree it would be very hard if the apple has black spots on it it could be a blight, look at the trunk of the tree and see if there is sap running out if there are holes that look like a woodpecker has been on it then the tree has bores in it really you are trying to raise the dead if the tree has a blight you might be able to kill it and save the tree go to a local nursery and talk to them about it but be ware it can get into other trees i have been in nursery work for 20 years in warren county tennessee and this is a hard one to answer but i have done my best you could save money and time and just remove the tree and replant

My apple tree is older and still bears fruit.
You need to get some miracle grow and a bag of sand and black soil.
Rinse the tree down right before Spring, fix a jug of water with
a tablespoon of antibacterial dishliquid, this keeps foliage green
and keeps bugs away.
When june bugs come, u may want to get the june bug spray or
the tree will get damaged.
To keep the tree from getting brown spots, spray the leaves with
a jug of water and a tablespoon of listerine.
