Apparently he turned down some role in AOTC to star in Evolution, but anybody have any idea which role it was?

Most likely Bail Organa or Jango Fett. They are the only two adult human characters introduced in E2. I can't imagine how awful Jango's character would have been portrayed by Duchovny's whiny voice. There would have been ZERO intimidation factor.
It might have been a character that was eliminated once Duchovny said no. I googled it, and found nothing specific.

According to IMDB, it does mention, under the trivia for Evolution, that David Duchovny did turn down a role in Star Wars to do Evolution, but it did not mention which role it was. I have seen conflicting articles that named the offered movie as either Episode II or Episode III, but no mention of specific role.
