does the epg(electronic programme guide) just work with freeview, or will it work with programmes on sky, if so how?

I don't think it can work directly with Sky, as Sky uses a different box. You can probably co-ordinate them so that Sky changes to a certain channel at a certain time and then the hard drive records that programme, but I think the best way to flexibly record Sky programmes is to get Sky Plus.

Satellite and digital terrestrial transmissions both have a data stream to provide an epg. In Sky's case the default transponder on Astra 28degE provides the epg for the rest of the transmissions. Other digital services on satellite have the epg information in their own individual data stream where possible. Arabic channels don't have epg or teletext for example because the character set is not available on most equipment.
