You can test stress conditions on plants, you can conduct tests of microbial fauna, you can test water quality, you could do various nutrient tests on either plants or animals (preferably plants).
All kinds of possibilities. I recommend growing up some tomato plants and either stress testing them, or doing experiments with light.
