for your first part: stand in front of him and try to talk to him, and see if he will be oritented with his shouldres parallel to yours, if he stood like that then he is not in a hurry, if he is in a hurry he wont be parrelel to you, he will tilt himself. another sign is if he took small steps aside while talking to him then he wants to leave
as for browsing, if you found him moving around slowly looking at different stuff then most probably he want to take a look and he may be needing somone to help him.

When the customer looks restless and goes through your goods quickly, then he is in a hurry and needs prompt service.
However, if the customer is going though your wears at leisure and taking his time, then he is browsing and is after nothing in particular.

when they want to browse they walk slower, pick things up, look at them, put them down, keep walking slowly...
when they are in a hurry, they do what the above person said pretty much and just walk faster and usually in a certain direction.

In a hurry, avoiding eye contact and when you ask how are you hey say fine and don'T ask you how you are... I am not sure about browsing...
