I had a brief contracting job in Hawaii. They flew me out there, and gave me a place to stay while I helped fix a few Perl scripts.
Advantages: It was Hawaii and I got to swim in a waterfall in the morning.
Disadvantages: They lived out in the middle of nowhere, and had no refrigeration. (They had solar power though.)

Not sure what you mean by 'in between' jobs. However, I do quite a range of different jobs which fit 'in between' all kinds of other jobs and home life. Makes life interesting rather than getting bogged down in one boring career.
I do a variety of coaching, teaching and speaking and I enjoy it all.
You are best off if you decide which jobs you are going to fit into your life. Think about what you are good at and what you like to do and then decide what you can do in your community using these.

Hi Chris,
If you are looking for a good in-between job this might be one for you, but if this is a survey about good in-between jobs......
I took a one day class for $40 at the community college and got my "Certification" card to be a Flagger. It was a great summer job. And, sufficed well between jobs in my career.
Good Luck, Tracy

pizza delivery, if you are willing to work and have a good car you can make a ton of money. it is by no means a career and it can be fun. the hours are pretty flexible and you can make great contacts to aid in finding a more permanent job. plus it helps you to go to know the city better so when you are going out and all you have is an address from the new paper you tend to have a better idea of how to get to where you need to go. it is low pressure. there is a lot of work involved with delivery and you have to be motivated. but i have had delivery jobs where i average over 20 bucks an hour with my tips.

Try and find a job as a server in a fancy restraunt. base pay usually sucks but tips are great. I use to average $300 a shift then received my cheque on top off that. warning you might have to kiss a little ***.
