Like any job interview, you want to appear looking your best. It shows your potential employer that you have your act together, and want the job that you're applying for. I would suggest either a nice dress or a tasteful business suit. Look professional, and you will be treated as such. ( I know this is a waitress job, but it's good practice for later. And given what kind of riff-raff will be sitting in front of this person wanting the same job as you, the "boss" will be much more impressed if you show up looking professional. I can almost guarantee you will get the job over someone else. )

If you were back in the 60-90's I would say a short skirt. But today a long dress or a tight pair of dress slacks would be good. At a resturant the boss picks your tables so it shouldn't matter what you wear. Dress for work not for show. If you worked waitressing in a bar it would be dress for show.
