I'm french and I have always heard egg rolls being referred to as "rouleaux de printemps."

Just to note that "pâté impérial" is the right translation.Congrats go to the above answer.
But
We say "egg rolls" i believe we just borrowed the name as is. Its a food so we don't change its name. Its been named egg rolls we say egg rolls. Meat=Viande but a big mac is a big mac.Of course we could say and do say "gros mac" but its wrong to change names to another language. Like Wall Mart is Wall Mart and that's just how it is. Its supposed to sound like the real thing.
If you do say "pâté impérial" most of us will look at you and say what!

if you mean vegetables and meat fryed in a sort of pastry (asian)it's "nems" , paté impérial is correct too but less used.
