The first time I ever heard this expression was while reading Michener's "Centennial". I'm probably wrong, but my impression is that the elephant is impending doom. ?? (If you "see the elephant" you decide to turn back from your journey). Putting it in that context, no, I have not seen the elephant!

I have saw a elegant elephant. He was riding on the back of a snapping turtle.
