5 spd trans. I feel like I'm giving it too much gas when i start. the start is smooth and gets me going... but i wanna know if the amount of gas im giving is too much and could damage anything.

Ideally you want the clutch to be fully engaged as soon as possible so that it is not slipping excessively. The trade-off is a jerky start. If the engine RPM is too high, you will be slipping the clutch too much. Try to learn a happy medium with lower RPM to start the car moving then give it more gas once the clutch is fully engaged.

It's just a matter of practice...

Well yeah,. Figure that once you get the feel of the clutch/gas thing you can reduce the amount of gas and still go without stalling the engine. There is a sweet point where it is a smooth take off and yet the drive tires don't spin or you stall out. On a flat road - if you slowly let go of the clutch, you can get the car going without stalling at idle speed. That is how low you can go. One has to be kinda bored to be doin that with no car behind them.

If you are staying on the gas when you shift, YES. When you start, the only problem you would get is from slipping the clutch. Basically, you just take a few miles off the clutches remaining life span. That leads to about a $200 to $500 repair, that doesn't include labor.

If your engine is revving high when going from 1st gear to 2ND then let off on the gas pedal. You should be able to feel when your car needs a bit more gas. Don't keep your foot on the clutch when accelerating. You could reduce the life of the clutch.

If you aren't red lining the engine, then you aren't giving it too much gas. As long as you have control over your acceleration, and you are not slipping the clutch, you are fine.
