Tucan Sam represents Fruit Loops cerial. What about the Trix rabbit? :)

Jackasses represent blind stubborness, unwillingness to change (especially from making a mistake), stupidity, unforgiving, short sightedness, and short-term memory.

Foxes represent cleverness, trickiness, thievery, shrewd, cunning.

Squirrels represent silliness, playfulness, taking one's self too seriously.

Now to address the attributes you mentioned...
Dogs represent loyalty (trust), true friendship, skillfulness, working together.

Rabbits often represent luck, good fortune (as in fruitfulness, fertility), carefree attitude, and cowardice (weakness, as in feminity)

Owls represent wisdom, self-restraint, that part which remains hidden.

I can't think of an animal that, in itself, represents something purely positive. Lots of positive traits to many animals.

Elephants is an animal with lots of positive traits.

Elephants represent hard work, extreme intelligence, great strength (especially in working together), learn from history (due to their great memories), strong protective natures (preservative), cautious, decent (appropriate), good taste (respectable, honorable)

In one tradition, a Snake represents the world....because one is purported to encircle it.

In a certain tradition, an Owl does represent wisdom, however in another it represents impending doom.

A Tiger represents Strength. This is why it is so often depicted in Tarot.

A Rabbit represents fertility in many cultures.

A Cat is seen as a Guardian in traditions as far back as Egypt.
