When I was scared of roller coasters, I would wait in line with my friends and then walk to the exit when it was time to ride. My friends didn't think I was a wuss for not riding and chances are yours won't either, but if you think they will and that bothers you, you could just say you don't feel well enough to ride (like you said) or suggest something else to do.
You didn't say what kind of assignment you have, but when we did a science thing at Six Flags, all of our work could be done without actually going on the rides, even though there were questions about them.
Eventually, I got talked into riding a roller coaster, and I loved it! They're not as bad as they look and you really don't know what they're like until you try one. You can always back out up until it's time to get on. Start with the smaller ones and then work your way up. Maybe skip the more intense rides, like Xcelerator, for now.

But you and your friends can still have fun at Knotts, even if you don't go on the coasters. =]

It's so funny that you ask, I had this problem too! Notice I said HAD, though, lol, I just went to Magic Mountain a couple months ago for the first time in about 6-7 years. I went with a bunch of friends, and was pretty much FUH-REAKED OUT! I was shaking, my stomach was turning, and just the roar of the roller coasters put me on edge. The first ride we went on was Scream! I kept telling myself I can do this. By the time I was in the harness, I was getting ready to have a heart attack. It started, I prayed to God, lol, and then closed my eyes. Before I knew it it was over, and it wasn't bad! I went on the same ride again later, and loved it! That's the only ride I went on that day, but the following day I went again with my younger sister and her friends. That day, I went on almost EVERY SINGLE RIDE. I was ecstatic, I'm in love with them now, channel your nervous energy into screaming your lungs out, it's allowed, lol, and so much fun. So go for it, if there's one your uneasy about, don't do it, and ask your friends not to pressure you-it's difficult for you to do. But go on, live life to the fullest, get over your fears!! Good Luck!

eat constantly while you are there. use the stall tactic. say you want to save going on the rollercoaster until last. and then ditch everyone and don't come out of hiding until it is too late. that is what i would do because i am terrified of rollercoasters! the last time i was on a rollercoaster was in san diego. oh, it is so cool because it is wooden ... that is what my boyfriend said... so he talked me into it. i was scared too death! never again.
