To me, half the fun of going out to eat is having drinks at the bar before hand. When my fiance and I go out to eat at a nice restaurant we try to make a night out of it, so waiting an hour or so while having drinks is not only acceptable, but appreciated.
However there are those times when one is in a hurry and wants to get in and out quick. For those types of situations I tend to be willing to wait 30 minutes at the most, depending upon the quality of food and service.
Being a once-upon-a-time restaurant manager I can tell you that I have seen hundreds of people wait an hour and a half (or longer) to eat at a restaurant. Honestly, there is no right or wrong answer to your question; just a matter of personal preference and opinion.

If we have been told the wait is 30 minutes; I will wait only 10 minutes beyond that; and sometimes only 5, depending on the rudeness factor of the maitre 'de

I've been in fancy restaurants where I had no intention of dining even though I had a reservation more than once. I was just there with a buddy to people watch! We ate tacos later!
