Tell them your a card carrying P.E.T.A. vegetarian/vegan and that their thoughtlessness is a thinly veiled insult of your ethical beliefs. Then chuck the wallet at them, turn around to leave and mutter "baby cow skin wallet. Unbelievable."

I tell them thank you so very much. There is nothing you can do about it. At least, for the moment. However, I know that I will never eat veal.
