Splash Mountain, Matterhorn Bobsleds, and Pirates of the Caribbean are my favorites. All of the "mountain" rides, Peter Pan, Alice in Wonderland, the Tiki Room, and It's a Small World are some others that I like a lot too. All of the rides and shows are great though!
Remember Dreams Come True, the fireworks show, is a must see--it's amazing!
You didn't say if you were going to California Adventure, but if you are, Soarin' Over California is a must! Tower of Terror and California Screamin' are fun too, but Soarin' is incredible.

Splash Mountain! You have to go on this ride it is one of the best rides at Disneyland! It is so much fun, but make sure you get a fast pass or you'll have to wait in line for a very long time.

Don't miss Pirates of the Caribbean, its a small world or The Enchanted Tiki Room.
Oh and Jungle Cruise is wonderful too!
