Because by the time they get yanked you have enough wisdom to take care of the rest of your teeth before you have to feel like your head is going to explode after a brief nap comes to a conclusion with your having to chew lightly and talk funny for an undetermined amount of time.

I don't know where I read this, but I think they are called so because they come later in life at the age of wisdom-or early adulthood in this case- when one is supposed to become "wiser" relative to their previous years

Good question. I bet it has something to do with the age you usually get them at, like in your late teenage years, because that might be when you are supposedly developing more wisdom.
