All the Same Majors used for Any Construction Occupation, like Architectural Design, Industrial Design, and the Like for a Start. Add in LOTS of Physics, Computer Design, and Art(If it doesn't LOOK Great, it won't be). A little Medical training wouldn't hurt (so you Understand the Body and it's reactions to Stress).

I'd suggest Contacting Roller Coaster Enthusiast clubs, Any Companies that are listed as having Built the Newest Coasters, and Any University specializing in Engineering (i.e. MIT), and Ask, Straight forward and Professionally, that you Want to Enter the Field, and what Companies require. I'm sure, if you are Patient, and make some Contacts, you can get More Information than you can Handle!

Engineering---civil, mechanical, electrical, structural. All of those things come into play when designing a coaster.

I'm guessing some kind of mechanical engineer maybe even architectural engineering.
