anything in particular to worry about? besides killing myself.

I bought the plug w/ the 3 loose wires sticking out as well as the new hot water line and elbow to replace the current copper line. the middle one looks like the green (ground) but i can't tell which one is the black or white one, they all have metal tips. Also, do i have to have the little plastic tops to twist the wires together? or electrical tape sufficient?

The green is the ground. It realy doesn't matter what the other two hook to. Use wire nuts. The tape will degrade over time and fall off. It could cause a short and in some cases cause an electrical fire.

Your correct that the middle wire is the ground. To identify the neutral is rather simple. Just look at the insulation on the cord. The power (black) wire will be smooth and the neutral (white) will have a rib in the insulation that you can see and feel. Then its simple to connect the wires in the DW juct. box and YES! you need to use wire nuts for best , safest connection. Be careful and good luck.

the green is the ground , the smooth one is the black, the one with the ridges runing down the length is the white. use wire nuts unless you like fire
