Would it be legal to go and live on an uninhabited island? just wondering

That depends upon the laws governing that island. Almost all uninhabited islands are either privately owned or are under the control of some government that has laws regarding settlement.
In most cases, you would either be trespassing or "squatting" (illegally settling) if you set up a permanent residence on an island without researching the situation thoroughly.

That answer it it depends upon the island and the island's sovereign. Many of the pacific islands that are controlled by the United States have been turned into wild life refuges and human visitation let along habitation is strictly controlled.

You might want to understand why the island is uninhabited. Most likely there are very good reasons no human is living there like, lack of fresh water, lack of food.

Seeing that every uninhabited island is the property of some government in the world, it probably would not be legal to live on one without permission from that government. But would anyone care if you did? Probably not.

To live by your free will, on an uninhabited island, unless you own it, it's not legal. As it is not legal to live in an uninhabited land, plot, or house. Everything is owned by someone.

You have to purchase the island from whomever owns it. Otherwise you are trespassing and can be eaten by the howler monkeys living there.

Many many people own islands. Some people use them for day picnic spots and dont put up any permanent structures. Others put in small huts or beach houses. Others still put in humungous elaborate structures.

Oh, the other thing you have to worry about is pirates - the modern day pirates would not hesitate to kill you if they found you and take everything you own. They dont like to leave survivors, so I would suggest importing a few big cats (lions, tigers, cougars, etc.) and letting them roam the island, and keep an Uzi handy to defend yourself with.

It is impossible. Were you to find an island and live on it, it would become an inhabited island. No one lives on uninhabited islands.

Even if no government owns that island, they have enough clout usually to storm in as they please and announce that they own it after they hide your corpse. Governments are evil like that, especially ours. Basically if you have no military or political connections of your own to protect you, expect to be conquered.
