I am a huge salsa fan too! I almost can’t even stand the taste of store bought salsa anymore! Try this simple recipe:
1 can stewed tomatoes, drained (use stewed tomatoes so that the skins are removed and acid is reduced)
1 jalapeño pepper
1 medium yellow or white onion
1-2 garlic cloves
Cilantro (as much or as little as you want to taste)
A pinch of salt to taste
Place tomatoes in a bowl
Finely dice the onion and add to the tomatoes
Press the garlic or finely chop and place into the bowl
Mix the current ingredients. (Garlic flavors the more you move it)
Cut the jalapeño lengthwise in half and then again and slide your knife up the pepper as to remove the seeds and the white rib meat. Finely dice as much of the jalapeño you want to use and add to the bowl. The more you add, the hotter it will be.
After rinsing your cilantro, pull the leaves off the stems and coarsely chop the leaves just to release the aroma and flavor. Add the cilantro to the bowl. Add salt to taste. Mix again.
The flavors of the salsa are all very different but very simple flavors so it won't be mucked up with too many spices or masking flavors.
Try some variations by roasting your garlic cloves before cutting them up and adding them. Also, add a little tiny bit of habenero pepper for added heat. Or, try adding lime juice and a little more salt. It gives a surprisingly different flavor!

2 lbs Tomatoes (Roma) a million sm onion (med if u like onion) a million Bunch of Cilantro (cut back off stems) a million-3 Jalapenos or warmer 2 Serrano Chilis( do no longer de-seed) 3 cloves garlic a million/2 teaspoon Salt/Pepper a million/2 can poultry Broth (u choose this for advantageous) mixture each and every thing on Med. for extra or less 2 minutes pour into bowl place in frig for atleast a a million hour if u can in one day delight in this San Diego, CA Salsa Fresca if its stable it is going to burn u two times ;-) lol. delight in

1 Serrano chile (or Jalapeno), seeds removed, chopped fine (wear gloves)
6 medium fresh tomatoes chopped into 1/4-inch chunks
1 medium red onion chopped
3 green onions sliced thin with green tops included
1/8 cup loosely-packed fresh cilantro, finely chopped
1/4 teaspoon cumin powder
1/2 teaspoon chili powder
1/2 teaspoon oregano, crushed between your palms
1/4 teaspoon garlic powder
1 (8-ounce) can tomato sauce
1 (4-ounce) can chopped mild green chiles
2 tablespoons red wine vinegar
Salt and pepper to taste
and a little bit of LOVE lol....
