There is a document that commands Jews to become so inebriated that they cannot distinguish between two very distinct figures. However, I am Jewish and do not drink at all. I think that your best bet would be to casually ask your coworkers what their plans are. Depending upon their religious views and professional standards, they may not touch a drop or they might all have requested the day off in advance. If you are tolerant of your coworkers' views and also prepared, you should be fine.

The holiday is from sat night to monday night, they should get the monday off, and be in on time tuesday.But since it's not a jesus holiday, I am sure they will be told they have to work anyway....
