Do you need to buy the burning crusade to be able to choose this profession?
And can you tell me were to find a trainer for jewelcrafting?

You have to have burning crusade installed to get jewel crafting. It depends on your race as to where you can get it. You should find someone in the first city you get to other than your starting place. If not, it will be the first larger city you get to. If you are dranai, you can get on Azuremyst. For exact location ask guard of the city.

Yes you need BC, and you can talk to a guard to find the trainer.

you have to have burning crusade and if you have it you'll have access to two new cities, one for alliance(draenai) and one for horde (blood elves).
The ONLY trainers for JC so far are in those cities and i can't remember for sure but i think there may be one in outlands.
