So many to choose from. I would plump for 'How Deep is Your Love' as it is the ultimate love song. But their disco stuff is all brilliant.

I like their early music late 60s/early 70s before saturday night fever. Songs like To Love Somebody, Massachusetts, Words, I started a Joke, First of May and My World are great songs.
