Because you let them know that you love them more than they love you. People want what they can not have. When they get it, they want it less and tend to seek something else that's more of a challenge. So slow it down some. Let them fall head over heels with you.
Sometimes they do fall in love and didn't want to, so they move on for that reason. Maybe they're just not ready for you yet. They want to sew their oats, so to speak.
