I have a 84 audi 5000s with 3 speed auto trans
so I should feel the car shift 2 times
but I feel if shift three times
so why is this???

Some transmissions are 3 speed with overdrive. It will shift 3 times total 2 times to third and the forth is to shift into overdrive.
ALSO - Half way through the 1984 model year Audi started putting a 4 speed automatic in the 5000 model.

It probably has an overdrive gear that it goes into at highway speeds.

It might not have a way to disable it like most newer cars have, but it should shift back into 3rd whenever you step on the gas.

The 3rd time you feel it shift its the Torque converter lock operating you will also see if you look very carefully the rev counter drop by around 600rpm.Audi enthusiast UK.
