Very personal preference. As far as I'm concerned the best pizza I ever had is from a small place in the Berkshires that makes it's own crust from sourdough or spelt dough, and puts the most unusual toppings on, not the general tomato sauce and cheese. Everything is fresh and different, it's more like eating an interesting meal that's on a pizza crust, ie, bbq chicken, portabello mushrooms and other veggies, a lot of use of goat cheese, along with mozzarella.

Chicago style deep-dish with the works.
With the cheese I aways enjoy a mix of mozzarella and provolone. There should be a lot of it, get a nice stretch going.
The crust should be golden brown and flaky not doughy or burnt.
Be careful with the toppings because some clash. Meatballs and pineapple make nice toppings alone but not together. And don't order anchovies, not even on a triple dog dare.
Drinks are mandatory but breadsticks are optional. Folding is good but patting the top with a napkin is a no no.

Pizzas shouldn't be tinkered with too much. So that excludes toppings such as pineapple and tuna plus novelty crusts with processed cheese pumped through the rim.
The basis of a good pizza is a thin crust with tomato paste and 2 or 3 cheeses, flavourings of basil, olive oil with a selection of maybe 3 toppings at most from ham, pepperoni, mushroom, onion, anchovies or additional cheese.
If you want to exoticise it, acceptable additions include chillies and jalepeno peppers.
Pizza is frugal peasant food and should remain that way so as not to overwhelm the essential flavours of tomato, basil & olive oil.
