It depends on diet.

herbivours have a much stronger digestive system than omnivours or carnivours. Their digestive tract pulls out more of the nutrients of the food, and so scat is smaller. Meat eaters tend to have shorter, weaker digestive tracts, and so do not digest as much of their food, and their scat is much larger. We are omnivours.

It is due to the makeup of the digestive tract. Rabbits poop little hard balls as do other animals. Most that poop balls are herbivores.

Goats and horses are grazing animals and eat constantly all day, and their food is digested in small amounts and passes into the intestines in literal mouthfuls.
Other animals eat "meals" like humans and their food is digested in larger lots .. therefore the difference in excrement.
