I use Ryanair and other budget airlines like Virgin Express / Vueling all the time...and I stay in hostels so usually I get a long weekend somewhere like Paris, Berlin, Prague, Rome, Barcelona for only €100 including flights...
at ALL of Ryanair airports there is a shuttle to get you to the center of the city... but you may have to wait around for it...
Regarding Frankfurt City - there's nothing there... it's a business city...unless you want to take the easybycoach.com bus from Hahn airport to Trier (now that's a stunning place, and a uni town so reasonably lively too) or spend a few days in Luxembourg...
Bruxelles is ok if you're going to visit Charleroi where the battle of Waterloo took place), otherwise fly into the main one...
Barcelona Girona/Reus about an hour by bus from the airport to the city...
Rome Ciampino is not far, you can get the local bus to the local train station and catch the train to the center of the city...
Krakow shouldn't be too bad, there's only one airport for that city.
Best bet is Trier (from Frankfurt Hahn, Krakow, or Rome I reckon :)
Now, as others have said, bring your own food, bring your own drink (bought in the secure area of the airport ) and TRAVEL LIGHT!!!
just one small lightweight bag ok...
And don't arrange any connections...

Barcelona ( Girona) is not far from the city Girona, only some 10 minutes by bus and there is a good bus connection with Barcelona as well.
Airport Riga is very near the city of Riga, just 15 minutes by bus or taxi.

The Frankfurt one is as least 2 hr ride from the city in a bus which is the only public services and it only leaves every hour and it is quite expensive. i dont recommend to use this airline at all

Your best using expedia for these types of breaks, the so called cheap flights added to the hotels will end up costing you far more than you expect, and then there is you transport to and from airport - hotel.
