Hi, wow, you have an exciting vacation ahead of you!
If you need to stick to your vegetarian diet and avoid the seafood, try out the list of restaurants on VegDining.com. Here's the link:
http://www.vegdining.com/GetRestList.cfm?rgk=EU-SPA
You might find it even more useful that some of these restaurants have been reviewed by people who have actually dined there.
Good luck finding a great vegetarian dining experience in Santiago de Compostela, and enjoy your trip!

Santiago de Compostela, the capital of Galicia, is a beautifully preserved medieval cathedral town and the third holiest town in Christendom (after Jerusalem and Rome). In 1993 the entire city was made a UNESCO World Heritage Site. See http://www.spain4uk.co.uk/places/santiago_de_compostela.htm for more details do not think about food explore the city.

My God, being in Santiago de Compostela and not eating all the exquisite seafood in there is a crime.
Forget about being veggie for a couple days
You are in the top notch place of the world of REAL seafood and gourmet specialties in there.
(sorry to put it this way., but its like signing up and travel to NY for a spiritual retirement) :-\
