When I polish my leather boots and then go out and it rains and all the white salt suddenly appears on them. Is there a way to avoid this?

try Scotch Guard acts as a barrier.

When you have worn your boots wash the outside in fresh water, wipe them off with a damp cloth and leave them to dry naturally, not near direct heat. When they are dry use a good quality polish to bring them back to a nice shine and to protect them. The fresh water will remove the salt and over a few treatments should stop it coming back.
Personally, I would never use dubbin as it opens the pores in the leather and allows it to absorb water.

There's a spray that you can spray on them (it's like scotch gurd, but it's for leather)and it creates a barrier to the elements. I can't think of the name, but I'm sure a high end shoe store would be able to tell you.

Yes,try treating them with dubbin first,it's an old method and footwear used to last a long time..
