The Torah lists forbidden birds (Lev. 11:13-19; Deut. 14:11-18), but does not specify why these particular birds are forbidden. All of the birds on the list are birds of prey or scavengers, thus the rabbis inferred that this was the basis for the distinction. Other birds are permitted, such as chicken, geese, ducks and turkeys.
Of the things that are in the waters, you may eat anything that has fins and scales. Lev. 11:9; Deut. 14:9. Thus, shellfish such as lobsters, oysters, shrimp, clams and crabs are all forbidden. Fish like tuna, carp, salmon and herring are all permitted.
According to some views, fish may not be eaten with meat

Generally with religious questions it doesn't make sense to ask "why". The only answer is, "because it's written, that's why".

The Torah, which is supposedly the word of God given to Moses on Mount Sinai, states that Jews should not eat creatures from the sea that don't have fins and scales - so that rules out shellfish, sharks, squid, etc. It also states that they shouldn't eat certain birds - it names them individually and doesn't give any reasoning behind the selection, although some people interpret the list as being "birds of prey".

If you live in a Jewish state, they're outlawed because of Old Testament teachings, which honestly kept people safe from some foods that were more likely to give a person food borne disease, such as pork.

It is all to do with how animals were classified: quadrupeds with hooves, scaly fish and feathered birds.

Anything falling outside of these categories (i.e pigs, shellfish etc.) simply wasn't eaten. This evolved into the kosher dietary laws.

If shellfish are improperly prepared they cause diarrhoea which is potentially deadly in a hot climate due to dehydration. Pigs are used as waste disposal units in hot countries. Not exactly appetising!

Certain foods are considered unclean by the Old Testament. Shellfish for example can carry diseases. They are creatures that eat dead sea life.
