The term is Sephardic. And the money for the napkins, utensils, etc. is built into the cost of the food. You obviously know nothing of the diner industry.

Not if you expect to stay in business. They should pay for the food...the rest should be gratis.
Make it your rule to make good food, at a fair price, and they will come, and you won't need to increase your profit margin in another area.
Also, service is critical. Good help, at a decent pace.

Well, not as an "extra" line item charge......but those things are generally built into the cost of the meal before hand.

what does that have to do with you being a "Greek-Jew". If you charge for those things its your own perogative... but i wouldn't be looking for many customers in the near future
