Apple trees and other fruit trees are pruned in the dead of winter. That is done so that one can identify the bud producing branches and allow to trim off the non producers.

Other shrubs each have a specific time best to prune them. You will need to get a book from library on pruning shrubs and bushes as the time for each varies greatly. For example, a juniper can be trimmed basically anytime. However a flowering lilac is pruned in late spring early summer after it blooms.

You should prune them down before the first frost in late fall/early winter.
