Try listening to songs of Aldimeola ("Race with the devil on the Spanish Highway" is good example of jazz-metal fusion), Miles Davis and some of the works of Stanley Clarke and Chick Corea. These are really good Jazz fusion artists and their music has great depth. Niacin is also a good band, but not as good as some of the artists that I mentioned above. Progressive Rock band Liquid Tension Experiment also play lots of Jazz Fusion.

To be specific about Miles, try the Bitches Brew album. Bitches Brew is considered the most important of fusion albums. Be prepared, its very experimental.

Frank Zappa made an album that was created about the same time as Bitches Brew. Great, no BS album. It includes a 17 minute jam.

Jeff Beck made a great album, with amazing musicians, its called Blow By Blow. It's slightly more on the rock side.

For Weather Report, try the Heavy Weather album. Paco Pastorious played bass in this band. The album is worth hearing just for the bass. Wayne Shorter plays sax. Personally, I prefer his 1960's stuff, but if your looking for fusion, this is a great album.
