Ohh, you’ve just missed MPH ’07, which is a good show!
It depends what you want really. What do you want to see? New cars, modified cars, classic cars, motor racing cars?
For New you’ll have to wait until the motor show in 2008.
If you're looking for 'modified shows' then Santa Pod is a good place to look. They have lots for the Max Power crowd (not my sort of thing, but there you go). They also do some for classic stuff. Big Bang is on at the end of April and has old and new VW (along with drag racing).
There is the national kit car show (6th & 7th May) near Coventry, which is supposed to be excellent (link below).
If you want to see motor racing cars, why not go to a racetrack and watch some action. The club racing at UK circuits is excellent, and is always reasonably priced. You can go into the paddock and pits, and get up close to the cars and drivers. You also get to watch some of the closest wheel-to-wheel racing you’ll ever see. There is a link to one (of many) clubs below, and the season is starting soon.
Finally the Goodwood festival of speed is 22 – 24 June (link below), and is probably the most sophisticated motoring event you’ll ever go to. You’ll see new and old racing cars worth millions, from modern F1 to ancient Bentleys, all racing up a hill for no reason whatsoever except good fun! Pricey, but you’ll never forget it.
