But this is why- Olives don’t come to us in edible form straight from the tree. They have to be processed. Black and green olives (which can be the same olives—the color is how they end up, not necessarily how they grow) are processed differently. Green olives are for the most part intended to be eaten raw. They are cured not cooked. Canned black olives are literally cooked, like most anything else in a can. If you canned green olives, it would cook them, and that’s not what you want for a cured olive meant to be eaten raw. If you tried to cook black olives in jars (the processing is done in the actual vessel in which the olives are sold), you’d break a lot of jars.

That's odd, I've always seen black olives in glass jars just like the green ones.
However, one reason may be that black olives, when bunched together and in the brine, has a dark black color which makes seeing the olives difficult to see. So to save money the company may use cans instead considering you can't tell what's in the jar to begin with.

Because black olives are so much more tasty that they didn't see a point in wasting money on packaging them in a fancy jar...they're not sitting around to look nice, they're for eating! ;)

Good question. I happen to love both kind though. I do like the black ones without the pits. . . .takes less time to eat than the one with the pits. I could eat a whole can of black ones but don't know if I could actually eat a whole jar of green ones (not at one time anyway). . . . hmmm making me hungry.

i would never think of this. thats really deep thinking. i think its because if the black olive were in glass you would not be able to see it for the dark colored liquid
