Having watched red dwarf in my late teens and early twenties and having always loved it, I don't think they ever actually said what they were mining for. They just said in the opening credits that Red Dwarf was a mining ship.
Now you've got my wondering, but no, seriously, they never said...
Just in case I'm wrong I'm going to forward this question to the foremost expert on Red Dwarf to see if he knows...

I'm watching re runs on BBCE now and still know them word for word and STILL laugh hysterically!! I got 1st two series in 2003 on DVD and desperately want the remainder to complete the collection. There was also talk of making a movie in 2003 (when I was last in the UK) but it hasn't materialized yet. If it does I doubt I'll hear about it hear in Asia :-(
I had the very same thought yesterday funnily enough...if they're up in space...what on earth were they mining?
Had they been mining on a planet and had to leave then got kicked out of orbit or something?
I like spotting the mistakes too like Lister (series 7 I think) recovers a mint imperial from Captain Hollander's mouth saying "he was sucking it when he was shot" but we all know they were disintegrated and left as piles of dust.
I especially love the time travel sections as they put so much thought into it now, when you see modern films such as Minority Report you can see the holes in the story, thanks to the carefully written scripts for red dwarf. No time travel story can pull the wool over my eyes any more. No more willing suspension of disbelief!
And yet still so much...
"Do you really want to go to red ALERT Mr Rimmer Sir? It does mean changing the bulb!"
My fav ever scene would be the triple decker, fried egg, chilli sauce and chutney sandwich scene....oh and Cat squatting down behind the bush in 'Backwards' just outside of Nodnol at the end...CLASSIC!
I think I have a bit of each chareacter in me that's why I can relate.

Looking at the Red Dwarf ship it seems to have a asteroid or Meteor sticking out of the side of the ship.

just finished rewatching all the shows, yet again, and have read the books, and asked my husband and we both agree that they never say what they are mining for. Just for another few laughs.

I don't think they ever said just what they were mining for. (Gazpacho soup! ) I love Cat. My kids are absolutely in love with the show!!
