Flies want food and a place to have offspring, they usually choose feces of dead animals because when they plant their lava they have something to eat when they hatch into maggots. They tend to also be attracted to bright colours or colours that resemble poo. Another thing they love is smells.
One of the most important reasons Flies excist is because they help to decompose things which keeps our environment healthy.

Flies (house flies) spit saliva out on the meat to start the digestion process, then suck the liquid in.
Flies also lay their eggs in organic matter, and meat is a favorite. The larvae (maggots) feed on the meat until they pupate and metamorphose into adult flies.
