Peas, Chard, and Kale are good. I dont know where lithgow is, but as a general rule of thumb, if you can break the ground with a shovel, you can plant

Try miners lettuce. Plant it in the summer and when winter comes get some hay or boards, make a cold frame around them (you can use old windows or even heavy clear plastic). You can also grow carrots and cover them with hay bales for the winter (then you can harvest them cuz the ground won't freeze under the bales), ditto any root veggies.
