In response to a previous answer on this question... Teaching should not be viewed as something to fall back on if you can't find a performance job. There's a lot more that goes into teaching than being a musician.

That said... it depends on how concentrated on violin performance you want to be. If you go to a good college known for music, you can still get intense training in your instrument and gain all the knowledge you need for the real world.

Music conservatory - more intense training in violin; less general knowledge - often, if not always, non-degree-granting institutions

College - less intense training in violin; more general knowledge, leads to a recognized degree

Not many music majors actually make a living as performers, so I would suggest that you attend a college and get a bachelor's degree in music with an emphasis in performance along with the professional education courses required for teaching credentials. Then, you can attend a conservatory if you wish but you will have the option of teaching.

My first gut feeling is Julliard, then a conservatory (IF you get accepted) then a regular college. If the college is close you may also want to seek out the symphony group in your area for extra avenues of expression and experience...

I'm not a music major or anything, but I want to help by giving my own opinion =)

I think a university would be better; there's nobody I know who entered college and left with the same major in mind. I changed my major like 3 times before I stuck to nursing. I think it'd be helpful you don't limit yourself so early. Take your general requirements; you might change your mind. I'm not saying music is bad or anything, just don't limit yourself.
