You DO NOT want to use olive oil to season a cast iron pan.
Olive oil smokes, vegetable oil gets rancid, use Crisco.
The best way to season the pan to keep it from rusting is to:
First,clean the pan thoroughly with steel wool to get the old rust, oil, etc off of the pan.
Next, put the pan in a 200 degree oven for 30 minutes to dry the pan and open the pores of the cast iron.
Pull the still warm pan from the oven and coat with WHITE CRISCO (not the yellow, butter flavor) all over inside and outside. Then place the pan upside down in the still heating oven for about 2 hours. You invert the pan to allow the excess to run out (place a cookie sheet with sides under the pan)
After 2 hours, shut the oven off, and leave the pan in the oven until it cools down naturally, wipe off any excess crisco and you have a sesoned cast iron pan.

Hello, I've had cast iron skillets,kettles,pots etc..for many years. The secret is to burn them in your oven at about 350 degrees for about 2 hours when you first get a new one,then take a paper towel with olive oil on it an wipe the inside really good,put it back in the oven and bake it for about 30 min longer it will smoke up abit but it seasons the cast iron. Once you have done this you can cook in them, its generally a good idea to coat them with olive oil before you cook in them, when you wash them if you have stuck on food just soak them in hot water the reason you don't use soap is because cast iron will take the soap in an therefore taste like soap and it can strip the base you have baked in the cast iron. Just dry it and reapply the oil and bake it for about 30 min, thats only when you wash them. After awhile of repeating this you wil be able to just wipe them out, The rust is from dampness an from not using them regularily, just put the use a paper towel with some oil on it an wipe them good before you put them away. I know this sounds like alot fo trouble but I've enjoyed mine for many years an they just get better an better, hope this helps you. Good luck!!

Scrub the rust off and coat it with vegetable oil if you're going to use it regularly. If not, coat it with food grade mineral oil. Vegetable oil will get rancid if it's never used. Then bake it in the oven at about 200 degrees for 30 mins. to open the pores and allow the oil in. Wipe off excess oil and put away.
Only wash it with plain hot water, never soap. Soap causes the oil to come out of it and start to rust. Old timers used to put them in the coals of a fire once a year to burn off the oil, but they used to use animal fat. The fire would get rid of the old fat so it wouldn't get rancid. It also burned off the crust that forms on the sides that they didn't bother to clean off. You can just clean it with soap and water once a year and reseason it if you want to start over again, but it isn't necessary..
