I tell them that I deny that I'm in denial. I make a denial of the denial.

I would tell that person that either:
a) they're projecting, which means that they are actually the one with the problem, or that
b) maybe I am, and that if I am aware of my denial, then knowing that I am in denial makes me not be in denial.
so Ha!

you dont have to say anything, if you arent in denial then you arent in denial. you dont have to convince them. not to mention that if you do claim to not be in denial then they just say "you see" or something and it feeds the whole problem. just ignore them.

Tell the person to stick to the substance of the discussion and leave out the ad hominem attacks.

Tell them that I (jungleroy) say that you have a firm grip on reality and that they should just face it.
I might say, I know you are but what am I.
Really depends on the circumstances.

"I don't think so, but I'll give it some thought."
That lets you deny you're in denial, and pacifies them that they made their point and they probably won't bring it up again.
