Nobody can really be too certain what the exact makeup of 7th century BC Roman religion was; it was most certainly polytheistic, but since no Latin writings or inscriptions go back that far, it's impossible to give many details. Livy has a great section in his histories about early Roman religion (look in the part about King Numa); unfortunately, it's almost certainly anachronistic. There are signs of ancestor worship seen through early grave goods in Italy; this kind of practice continued to be extrememly prominent in Roman life until, and even after, the advent of Christianity.

Rome in the time of Ancus honored Janus, the two-faced god of gates whose name we see in the first calendar month. Jupiter and Mars, as well as Romulus. They sacrificed to Venus during the month of Aprilus (the second month), Mercury, and his mother Maia (Maius is her month), Februarius was a Purification month; in it they make offerings to the dead, and celebrate the Lupercalia, which, in most points, resembles a purification. I'm sure I've missed some, but, overall the answer would be, they held to the old Roman gods, just as they did in the time of the Caesars.

i'm pretty sure that during the time you are describing Rome was at this point a monarchy. The roman republic began in 509-27 BCE. though they were still a polytheistic religion.

Technically speaking they were Roman Pagans.

In actuality, they believed in the same dieties as the Greeks did with all their gods, goddesses, and myths. Certain gods became renamed such as Zeus to Jupiter and Ares to Mars and Aphrodite to Venus. Mostly though they were given the same names since the Roman language came from Greek.

they were polytheists, like Greece.

640 is a pretty early date for Rome. I don't even know if they had a republic then.

Around that time, Romans either believed in the Greeks gods (a.k.a. deities) or they believed in superstitions.
