I hardly ever gamble and I still have lots of fun in Vegas. There is a great nightlife: restaurants, bars, nightclubs, shows, etc. That's what I usually go for. I gamble a bit, here and there, but not much. Also, if you want to do the whole "tourist" thing, you can walk around and take pictures of the "sights". Ooooohhhh...the Eiffel Tower. A pyramid. Big deal. However, the aquarium at Mandalay Bay is pretty damn cool. When I first went to see it I was skeptical and thinking: "This had better be worth the price." It was fun though.
If you are willing to drive a bit, there is Hoover Dam outside Vegas. And some other natural areas with great hiking, geology, nature, etc.

I've been to Vegas many times and I rarely gamble.
There's just something about stepping off that plane, breathing that desert air and feeling completely relaxed.
They don't call it Disneyland for Adults for nothing- the hotels are spectacular, each one a tourist attraction, with lots of entertainment besides gambling. Just walking the strip and taking in the sights is fun! Downtown, there's a great light show on Freemont Street every night. And you never know what great entertainers you can catch when you're in town!
You can rent a car relatively inexpensively and travel out to Hoover Dam, take a cruise on Lake Mead, head into the desert where the burros come right up to your car window so you can feed them sugar cubes.
And the very best part- Vegas has no clocks!

There are shows at every casino. Celine Dione has sang in Las Vegas almost every night for years. Here is a list of them:

Also, the Hoover Dam at Lake Meade is quite a sight to see. It's not too far outside of Las Vegas.
The casinos offer more than gambling. They usually are built around a theme. Like The Venetian has an Italian theme. There are lots of hotel casinos like this:

Actually, I DON'T recommend any gambling in Vegas. There are WAY too many shows to see.
Save the gambling for a closer casino.

There is lots to do...
1. shop (I know girls that go there from LA to clothes shop) - boooring
2. lots of entertainment (shows and such), but they are very expensive per ticket
3. dance clubs
Plus, if you get off the Strip, there are more everyday things to do. Without knowing what you like to do (maybe dwarf tossing is your kind of thing), it's tough to recommend anything.
People that live in Vegas don't go to the Strip. It's for tourists and people that work there. If you look online, you'll be able to find anything you're looking for.
