I can recommend an Asian tour including scuba diving, seeing turtles, jungle trekking, boat trips, island hopping, elephant rides, safari zoos, golf, rock climbing, yachting/ sailing....it goes on.
Singapore, Bali, Thailand, Borneo, Sarawak and Peninsular Malaysia. The exchange rate is so good your 6k will get you the best of the best and will stretch much further! You can have your clothes tailor made and buy teak furniture to your own specs to ship home.
My fav island was Redang, the SE coast with wooden shalets, white beach and crystal clear waters. There's a marine park to dive in, a hill to trek up and a lake to do some water sports. Ideal for a 2-3day stopover. There's Tioman too, bigger but much the same.

Wow you could take her somewhere really special with that amount, how about Australia or New Zealand, both have tons of culture and things to see, you will never be bored in either of those places for a holiday, were going to Australia ourselves in just under 5 weeks, we got return flights tickets, 3 nights in a hotel in Singapore, airport parking and travel insurance for less than £2,000 from Thomas Cook, were booking our hotels in Australia via our cousin and staying with her part of the time too, were ever you go have a wonderful time and enjoy yourselves.

I say the United States. If you have time to spend a couple weeks. As someone else mentioned, with a bit of planning it can be the bargain of the century.
Alternatively, Canada, either East or West coast would be fab. When it comes to the North American continent, there is much to see and do.

Big Island of Hawaii--explore the volcanoes, go snorkeling, visit rainforests, go on helicopter rides over the eruption. Really cool, rent a car and drive around the island staying in different spots. Sure, go to the beach every day, but snorkel and see the fish and turtles. Best vacation spot I found. Use TripAdvisor.com to guide you.

A safari in south africa was the most amazing place I have ever visited. We went to Shamwari which is the only reserve that has the big 5 (lion, rhino, hippo, leopard and buffalo) which is malaria free. you could also visit cape town *(recommend a trip to robben island where mandela was held) and to the wine region of stellenbosch)

Consider taking a cruise ship and be sure to take in some of the landfalls.
Carribean cruise, including stop in Jamaica offers waterfall hiking, for instance, and there are things to do on deck (swimming, jogging, playing golf).

I can recommend Munich & Oberstdorf for its barcrawls, meat feasts & mountain scenery;
Rural West Italy & Lisbon for their scenic mountainous villages;
Orlando/Kissimme for its theme parks & theme dinners;
Finland & Denmark for their only-slightly-but-nicely differentness;
and everywhere Eastern Block for their prices, explorations and for being quite safe to go around too.
