The same reason they do in any other sport. Dehydration.

During a Nascar event that could easily last over 2 hours, drivers become extremely overheated and dehydrated due to high temperatures in the cars (well into the 100's). Gatorade replenishes Electrolytes and helps the body recover from such exhaustion.

The temps that the engines give out added with the suit and helmet, the temps in stock cars can be tremendous. Those guys can sweat up to 2 gallons a race, so they constantly need to be hydrating themselves. And everyone knows why Tiger works out, it's to impress his crazy hot wife.

So they can rehydrate themselves from being in a car for a few hours with heats that get way about 100 degrees

temperatures in the cars and their firesuits make the sweat profusely, which requires the driver to stay hydrated, becoming dehydrated could cause dizziness, poor decision making...not good at 180mph

temps inside those cars gets HOT and they need something to keep them cool and rehydrate them.
