I grew up in Denver, Colorado and I don't know what the prices are like now but if you are a nature lover you will love the Rockies. You can travel up to Estes Park and see of the most beautiful scenery on earth. Central City about 30 mountain miles from Denver has gambling.
You can find some decent motel rooms in Idaho Springs and travel all around the mountains for a cheap price.
Plus, you can drive up to Denver in about 10 to 12 hours or less. You get to travel through the Red River Valley which I think is beautiful.
Just go to the middle of Kansas and take a left, you'll get there.
Coloradoans have always thought they were the Texans vacationland anyway.

Personally I'd suggest Miami/South Beach. Believe it or not, the little hotels on South Beach are very well priced with the understanding you are paying for the location and not the luxury. There are very nice hotels on the beach also, but they also come with steep prices. However, a small, art deco and old hotel right across the street from the beach can be inexpensive at times. Stayed at one for $90/night which was actually a half a block away from one that went for $395/night. Walked across the street and laid on the beach with those that were in the $395/night hotel as both places faced the beach and on the same street. They probably had a lot more bells and whistles when they went back to go to sleep, but we both had nice beds, just their hallways to their rooms probably had fresher paint. But keep in mind, they also were walking down the sidewalk in front of where we were staying to take in the South Beach night life experiences.
For those places, your best place to look is in Travelocity and do a search for South Beach hotels.
Just don't expect a good price for a Hilton or the luxury of a Hilton at a budget price. Just keep in mind it's the location and they are small and old hotels (don't expect room service or a maid in a tux to cater to your every needs - you're on a budget!)

I think you'd have fun in Wisconsin. We just got a bunch I mean a ton of snow. There's skiing, sledding, snow mobiling, ice fishing, ice sculptures, hockey, football, baseball, basketball, hunting, and other great things to do. There's also inside water parks and the people in Wisconsin are very friendly. You can get a hotel room starting around $40 a night. And most of the activities are cheap or not that expensive.

You can always get good deals in Vegas. You'll just need spending cash. If you're looking for something low-key and laid back, I've always loved Savannah (GREAT St.Patty's Day celebration, btw!). Otherwise, why not try for New Orleans? I've never been, but I hear it's amazing!
