There has been no official release date set, but on a picture from Bungie it says Fall 2007. Historically this would point to November because Halo was released November 15 and Halo 2 was released November 9. Another popular xbox game, gears of war, was released on November 21. Based purely on history I would say that Halo 3 will be out on Tuesday November 13.

My money is somewhere between Thanksgiving an Christmas so just put it out of your mind for now and stop watching the trailer, it will only drive you crazy...
