When a file is deleted, it is not actually removed from your hard drive. Rather the directory entry to the file is removed, so that Windows can not longer see it, and the space the file occupies is marked as free space.
As you save files in the future, eventually the location of the deleted file will be reused. Once that has happened, the deleted is permanently gone.
How long a file will "hang around" depends on how much free space you have on your computer, how often you save files, where the deleted file was physically located on the hard drive (it always looks for space starting at the inside center of the drive and moving out), etc.
It is unlikely that anyone could recover information more than a week or two back in time. If your hard drive is nearly full, it may only be a day or two back.
If you are concerned, go to http://download.com and look for a "file shredder" program. There are several available. They will go through your hard drive, and wherever it finds free space (deleted files) will overwrite the location with garbage. However running a shredder the first time can take a while (thinks hours). But once done, future "cleanings" go much faster.
