Because if you do stupid stuff like holding the kid on your lap, it's just a matter of time until you're getting divorced, flashing your bare crotch at photographers, and shaving your head.
It's a slippery slope, so don't do it! Buckle the kid into the seat properly!

Because you don't have the muscle strength necessary to hold a child in your lap during a crash.
An infant may seem light, but during a crash, the sudden deceleration of the car causes the child to suddenly feel like he weighs more than 200 lbs. due to the forces acting on the two of you. Only a few professional body builders would be strong enough to hold a child in their lap under those conditions.

Because at the moment of impact collision of your car, there are actually 2 collisions. You auto with some other object, THEN, you moving and colliding with the interior of your car! Your arms are not remotely strong enough to restrain your infant in that scenario.
